Hi Amy (great name!), this is a really great question! I love learning new facts so it’s quite a difficult one to answer but one of the most interesting things I have ever learnt is about a technique used in neuroscience called optogenetics. This is where scientists can put special light sensitive cells into brain cells and then turn on those brain cells using a laser! Scientists have used this to do loads of cool things, even put false memories into mice just by turning on a light! It hasn’t been used in humans yet though because its quite difficult to do, but it might be able to help with certain diseases in the future like Parkinson’s disease or depression! One of the best things about science is that there are so many different things to learn!
